Welcome to another Try A New Recipe Tuesday!!

Wow, I can’t believe we’re already inching towards the end of January already! I’m not gonna lie, you guys… life has been craaaazy. I thought that now that the holidays are over and 2020 is here that for some reason my life would be some sort of clean slate all of a sudden? And then I thought about who I am as a person and realized that’s a ridiculous thing to expect out of any month of the year lol!

And when my life gets crazy, I tend to lose track of a lot of my goals, which means that I am one of the 93% of people whose New Year’s Resolutions have already started to fall off the wagon a little bit (shocker!). I confess that I definitely called my #DryJanuary “close enough” this past weekend when I celebrated my best friend’s engagement in Big Bear – can you really blame me?

I’ve also been using the fact that I’ve been running a lot as an excuse to go back to eating what I want – that means I’ve been eating alllll the fried food and, while healthier than some, I realize that food from Trader Joe’s bags are not gonna cut it… at least not all the time.

Sauce recipe from The Low Carb Diet

SO, with that being said, I’m attempting to bring at least some balance back into my life with some Gluten-Free Shrimp Fettuccine and this homemade Alfredo sauce recipe from The Low Carb Diet.

You guys… let me tell you that I’ve tried to make fettuccine alfredo before since it’s one of my all-time favorite things to eat – especially after a long run when all I want is carbs and CHEESE – but I can never seem to get the sauce right! No matter how hard I try to let it sit and get that nice, thick consistency, it turns out to be more like cheesy noodle soup. 🙁

But when I added this homemade sauce recipe, it was like a lightbulb switched on once I mixed all the ingredients together and for once, it was PERFECT! Plus, it’s gluten-free and still tasted amazing.

This homemade alfredo sauce recipe also includes dairy-free parmesan cheese, which would’ve been a great substitute for someone like me who’s lactose-intolerant! But also, where do you find dairy-free cheese?? I thought that if there was any place that would have it, it would be Trader Joe’s, but it’s apparently not an easy thing to find if they don’t even have it.

So if anyone can point me in the right direction to help my, uh, digestive system… that would be great.

With the sauce (which I made with gluten-free flour since I also couldn’t find coconut flour since I didn’t know what the heck that was in the first place), I added gluten-free fettuccine, shrimp, spinach and mushrooms to make the meal complete.

What was your experience when trying to make one of your favorite dishes? I’m always open to new ideas and would love some out-of-the-box recipes to try!
