Hey there! Welcome to another happy Try A New Recipe Tuesday!!

Here we are in another week of quarantine life! Thankfully, there seems to be somewhat good news on the horizon that we’re starting to see the light at the end of the tunnel of all this coronavirus craziness.

We’ve all had to adjust to the “new normal” this pandemic has brought, and it’s been especially new for me and Jake since we also just moved into our new condo!

We are SO over the moon with our new place that is MUCH roomier than our last apartment, even though moving totally sucks.

And with the stress of moving + the way this pandemic has thrown everything out of whack, you could say that we loosened the reins a bit on the amount of, uh, emotional eating we’ve allowed for ourselves. I think it’s safe to say that we’ve been eating nothing but take out for the past week!

But you know what… this has been such a weird and stressful time unlike any that we’ve ever experienced before in our lives, so if you’re looking for permission to eat whatever comfort food you need to get through this, here it is!

I know that this week’s Instant Pot Healthy Chicken Pot Pie Soup from 40Aprons gave me all the comfort I needed – and without the guilt that usually comes from indulging in food that makes my soul happy, but my stomach, not so much.

This perfect mixture of fresh veggies (which I finally got to go back to TJ’s for – yay!), herbs and cashews created a surprisingly hearty soup that makes you forget that it’s actually gluten-free, dairy-free, and grain-free! Also, if you’re on that Paleo or Whole30 train, you’re in the clear with this one!

I felt particularly proud that I was able to whip up this delicious rendition of one of America’s favorite dishes so easily, and I know you will be too! With some leftovers to spare. 🙂
